Disappeared this week without blogging much, least the only thing I could do is take pictures and upload them either on Facebook or Instagram.
Flooded my two social network website with pictures of food. Literally.
Reckon that's the only thing I have been up to this week. And yet the most guilty thing is I haven't done any exercise to get rid of the calories inside me. My horror.
Friday, Saturday and Sunday mornings are now very important to me to get my exercises done. Pretty much going to start this exercise regiment where Friday is swimming, Saturday is cycling and Sunday is running. Kind of sound as though I'm training for a triathlon.
So let's see what nonsense I have been up to this crazy week.
Started with last week baking session. Though now lately, I don't take that much picture of my baking process, just the end product.
P.S. It's going to be a chocolatey post.
Started with a random baking session last Wednesday.
Wanted to taste my new hand mixer out, and at the same time had a super bad craving for chocolate lava cake which I couldn't satisfy it.
Didn't had the time to buy the dessert either, so it was just a straight moody week.
Decided to make my own lava cake instead. It was another experimental baking session again. The first time I baked lava cake two years ago, it didn't had any shape when I took it out of the oven and immediately the chocolate oozed out. It had the taste, just no substance or 'backbone' at all.
This time, I'm learning from experience.
And a friend of mine gave me this tip that after I'm done with the mixing of all the ingredients, I placed the baking bowls in the freezer for about half hour before I bake them.
Reason is to get the chocolate a little harden up, so when I bake them, the inside would not be baked so fast, making it more molten inside.
I'll say overall it was not too bad.
Except I made a horrible mistake when I took the lava cakes out.
Silly me, but I took one bowl out first, to see if it was done baking since it still look under-baked (Yes I know lava cake is suppose to be half baked but it seriously looked really under-baked then).
So I started poking it with a fork and having a taste session. Eventually I got excited that it taste awesome that I forgot I have 5 more bowls inside the oven baking away.
So the remaining 5 bowls were well-done instead of medium rare.
Good job to me. Only one had the oozing effect.
Ingredients:
100g cooking chocolate
100g butter
8 tablespoons sugar (should have been reduced)
2 eggs
4 tablespoons self-raising flour
Steps:
Melt the butter and chocolate over a hot water bath.
Whisk the sugar and egg until frothy.
Add the melted chocolate/butter mixture into the frothy mixture.
Stir in the flour.
Fill the metal baking bowls till 3/4.
Left them in the freezer for about half hour.
Heat the oven to 180 degree and bake the metal bowls for about 11minutes.
Served with ice cream and icing sugar on top.
Enjoy.
My next baking session was on Saturday after big brother requested for brownies.
Tsk at me for baking his requests.
Usually I like to buy Betty Crocker brownie mix and just add the essential ingredients before 'throwing' them into the oven to bake.
Today I shall be a little less lazy and bake them from scratch. Just because baking in Singapore is so expensive.
Even toss in a bit of blueberries for extra flavor.
But somehow my blueberries weren't enough to get much taste out, but they were too precious to be wasted on my brother's want.
They didn't really turn out even, surprisingly since they were all level-ed before I 'threw' them inside the oven. Apparently one side rise higher than the other side.
But who cares, they were super moist and awesome tasting. A little too sweet because of my sugar adding again (mental reminder to add less sugar).
And at night when big brother brought home ice cream for the brownies, they tasted even more awesome. Pity he didn't get Ben&Jerry ice cream as what I requested.
See. This is called bully. I baked for him, and he couldn't get the ice cream I wanted. Imagine eating the brownies with B&J chocolate therapy ice cream. Aww...
Ingredients:
150g chocolate
150 butter
3 eggs
4 tablespoons milo powder
10 tablespoons sugar
8 tablespoons plain flour
Steps:
Melt the butter and chocolate over a hot water bath.
Mix milo powder and sugar and then add eggs.
Add in the melted chocolate/butter mixture
Stir in the flour
Once evenly mixed, butter the baking tray and pour in the mixture.
Bake at 180 degree for about 20 minutes
I found that it's roughly the same steps as baking the lava cake, just that for brownies I add milo powder and it's baked for a longer time period. As well as more flour.
But well, main thing it's one dessert that was enjoyed by everyone who ate it. Even daddy!
Definitely a to-die-for dessert as proclaimed by me.
And finally my third baking session on Monday.
This time I have an accomplice to bake with me. Cheesecake is something I never baked/done before. Mainly because cream cheese is quite pricey to get, and also the thought of the calories inside the cheesecake stopped me.
I rather buy it off the shelf and not know how much calories is inside one slice.
And here I am, making my first no bake oreo cheesecake. Congrats to myself.
We took roughly an hour to get everything done, before it is left to be forgotten in the freezer till the following day.
The first bite for our tasting session is plain awesome. We probably should have added a bit more crust to balance out with the thick level of cheesecake.
But other than that, we also should have added more oreo but I kind of ran out of oreo during the baking session.
Bright side, ntuc is having offer on oreo biscuits and I bought 4 rolls! A big debate whether I should have bought 6 rolls instead or even 8! Yes, I love oreo biscuits. If it's still on offer tomorrow, I might stock up with another 4 rolls xD
Ingredients:
8 pieces digestive biscuits for crust
enough butter for the biscuits
2 packets of cream cheese (250g each)
1.5 cup of whipping cream
1 teaspoon vanilla essence
1/2 cup sugar or 8 tablespoons of sugar
Oreo biscuits
Steps:
Melt the butter in the microwave
Crush digestive biscuits
Make crust and leave it in the freezer
In a mixing bowl, mix the cream cheese, whipping cream, sugar and vanilla essence
Crush oreo biscuits into smaller pieces and add into mixture
Finally pour mixture into the tin
Add more larger pieces of oreo at the top
Freeze for at least 4 hours
And guess who's my first taster? Duhhh. Big brother!
He even took the biggest slice.
So that's the three baking experiments I had over the past week.
Probably not going to bake anything this weekend, super need a break from eating desserts and also to give my poor stomach a break from being a bad sweet tooth.
Till then, it's back to burning the calories off.
